The 4th of July brings about celebrations in many forms usually ending with a sky filled with sparkling fireworks to be enjoyed with oohs and ahs! But, you can make your very own cherry burst sparkler 4th of July brownie cupcakes and hear oohs and ahs from your party guests or family. As a special treat, this recipe is about as simple as they come.
All you will need is:
-Brownie Mix (plus 2 or 3 eggs, oil and water)
-Jar of Maraschino Cherries
-Jar of Marshmallow Creme
-Box of Blue Raspberry Jello
Start with your favorite brownie mix, or mix up some brownies from scratch if you prefer. If you follow a mix, you’ll typically need to add your own eggs, oil and water. If you want the brownies to be more cake like, you’ll want to add an extra egg. If you want to add a twist of healthier flavor, you can substitute oil for applesauce.
Preheat the oven to 350 (or follow the temperature recommended on the box). Follow the steps on the Brownie Mix box for preparing the brownies. Once you have the brownies mixed up, scoop by spoon into a cupcake paper lined muffin tin. Fill each paper liner about half way.
The next step involves adding your cherry burst surprise. Simply place a maraschino cherry in the middle of each half-filled cupcake liner. Then scoop one more spoonful of brownie mix over top until cherries are covered.
Place in oven and bake for approximately 5 minutes less than recommended on the box. If they are too gooey when you check them, you can always bake a few more minutes. Of course, if you like them very cake like, then you’ll want to bake the full recommended amount of time on the brownie mix box.
Take them out of the oven and allow to cool sufficiently. This will probably take at least 20 minutes before proceeding to frosting and decorating them. The longer they are allowed to cool, the easier frosting them will be.
Scoop out with a knife or spoon, approximately one teaspoon of marshmallow creme and frost the top of each cupcake until it is covered in white. Add as much or as little as you like as long as it is covered to conceal the brown color of the brownie.
Open up the blue raspberry Jello package and sprinkle lightly over top of the white marshmallow creme. Unless you like a super sugary taste to your cupcakes, less is more with this step. You’ll want to get enough blue to give it a hint of blue over top of the white and to give it a bit of a sparkle.
The final step is to place a maraschino cherry on the top, in the center of each cupcake.
You are now ready to set your finished product out on a plate to serve. Feel free to decorate your plate as patriotic as you like. For the picture, I chose red, white and blue Nerd candies sprinkled about.
