I’m on a diet to lose weight. So naturally I’m writing about sweets, desserts and treats recipes. Do you hate canned frosting but use it because it’s too much bother to make your own homemade cake frosting? Try easy these cream cheese, caramel latte and mocha fudge frosting recipes. Homemade from natural ingredients makes these frostings fresh and delicious. You can also be sure that your family is not getting artificial colors, flavors and hydrogenated fats with these frosting recipes.
Cream Cheese Frosting: I make a large batch and use this frosting for cakes and cookies. I keep it on hand for my husband to sneak tastes as he loves it. You will need:
8 ounce package of cream cheese (I use Neufchatel because it has less fat and all the great taste)
one stick real salted butter
one to two pounds confectioner’s sugar (also called 10x sugar)
Set out butter and cream cheese and allow to warm to room temperature. In a blender or food processor, cream butter and cream cheese until smooth. Add teaspoon pure vanilla and half teaspoon salt and blend. Add powdered sugar gradually as frosting is blending. Add sugar to taste. My family likes cream cheese frosting about 10 steps down on the sweetness scale from traditional cream cheese frosting. If
Mocha Fudge Frosting
-one stick butter
-one half cup to 3/4 cup Hershey’s unsweetened baking cocoa or two squares melted Baker’s chocolate. Don’t skimp on the cocoa and buy cheap brands. You don’t save much money but you often lose a great deal on taste.
-one teaspoon pure vanilla
-half teaspoon salt
-two tablespoons cold fresh brewed coffee (no instant, decaffeinated, etc.)
-one pound confectioner’s (10x) sugar
Blend in blender or with hand mixer until creamy. Again, adjust sugar and cocoa to taste. My family likes their chocolate dark and bittersweet, so it sits up and barks. They don’t care for sugary sweet frosting.
Caramel Latte Frosting:
In a medium saucepan melt one stick butter, two cup brown sugar (organic Florida Crystals or Sucanat works great), one can evaporated milk, one half teaspoon salt and one teaspoon vanilla. Stir over low heat until sugar is completely dissolved. Remove from heat and add powdered sugar to until frosting of spreadable consistency. This frosting is delicious spread on butter cake and sprinkled with fresh chopped pecans.
