If you’re looking for something to give your Dad on Father’s Day, and especially if your father is anything like mine, he’ll love this delectable dessert.
Peanut butter has always been a household favorite in our family. One of our favorite things to do as kids was to come up with unique peanut butter sandwiches; everything from p.b. and banana, to p.b and potato chips, p.b and pickles, peanut butter and ice cream, you name it, we probably made a p.b sandwich out of it.
Peanut butter is just one of those things that’s good with almost anything. This recipe however, definitely lives up to its title. It is by far the best peanut butter pie I’ve ever had (my dad thinks so too). Hope you enjoy it as much as we do.
Please note that using Jif creamy peanut butter is crucial to this recipe (other p.b.’s just don’t do it justice). As far as the toppings go, you’re free do anything you like. Some like to add crushed nuts, candy and chocolate chips on top, but use whatever you’d like to make it your unique topping. I like to pipe from a zip lock bag (easy clean up) a little caramel ice cream topping warmed and mixed w/ peanut butter to criss-cross with the chocolate syrup on top for a nice look.
Nutter Butter Cookies (24)
½ tsp. vanilla
5 tbls melted butter
For 1st Layer:
1 cup p.b. chips or mix of chocolate and p.b chips
2 tbls. softened butter
6-7 oz sweetened condensed milk (about ½ can)
(alternate 1st layer filling recipe)- ¾ cup powdered sugar, 1/3 cup Jif p.b. 3 tbls. softened butter and ¼ cup chopped peanuts
For 2nd Layer:
Small box vanilla instant pudding
Milk (follow dir. On box)
½ cup Jif p.b creamy
½ – 1 cup whipped cream
For 3rd Layer
1/3 cup creamy Jif p.b
1 ½ cups whipped cream (heavy cream, 1 tsp. vanilla, 2 tsp. sugar)
Halved or chopped Reeses peanut butter miniature cups and crushed peanuts for garnish
Caramel, peanut butter and Chocolate Syrup for design on top (use zip lock baggies for pastry bags)
Crust – 24 crushed Nutter Butter cookies (about 1 1/3 cups), ½ tsp. vanilla, and 5 tbls. of melted butter mixed well and pressed into bottom and sides of pie pan.
1st layer – P.B. Fudge layer; melt together in a double boiler or microwave; 1 cup of peanut butter chips (or creamy peanut butter), 2Tbs. butter, and a little less than half of a 14 ounce (net weight) can of sweetened condensed milk (not evaporated milk). The peanut butter chips can be replaced or blended with chocolate chips if you prefer. If you’re using a microwave please watch carefully and melt slowly so chocolate doesn’t burn and has a nice glossy finish when stirred together. Spread over nutter butter cookie crust and refrigerate while making the second layer. If you think the peanut butter fudge is too heavy of a layer for your tastes, you can instead use ¾ cup powdered sugar, 1/3 cup Jif creamy p.b, 3 tbls. softened butter and ¼ cup chopped peanuts for this layer. Both are wonderful and make a nice 1st layer depending on your tastes.
2nd layer– Peanut Butter silk filling; 1 small box instant vanilla pudding (follow directions on box), and mix in about ½ cup of Jif creamy peanut butter and blend well, then fold in about ½-1 cup of whipped cream depending on how light you’d like this layer (homemade whipped cream or cool whip are both fine, but whipped cream made with fresh heavy cream, a little spot of sugar and tiny splash of vanilla make it even better) . Spread peanut butter silk layer over p.b. fudge layer and refrigerate again while preparing third layer.
3rd layer– P.B whipped cream topping; Homemade whipped cream is so much better, but if you’re pressed for time, using Cool Whip is ok too. Mix 1/3 cup creamy Jif peanut butter into 1-1 ½ cups whipped cream and pipe florets on top of the pie. I like to use my pastry bag with a flower tip to get a pretty topping, but you’re welcome to lightly spread the whipped cream topping however you wish. Sprinkle chopped Reeses peanut butter cups and peanuts for garnish. Decorate with caramel and chocolate syrups in criss-cross patterns over the top.
Refrigerate before serving.
