This original zucchini recipe is a favorite of mine because it has been served to and shared with my family and friends for over 40 years. It is from my mom’s recipe collection that I cherish along with many other original recipes. I hope you will find it easy to prepare and that it is enjoyed by everyone!
3 cups grated zucchini
2 cups bisquick
½ cup onion finely chopped
½ cup canola oil
½ cup shredded mozzarella cheese
½ cup grated parmesan cheese (Asiago cheese can be substituted)
1 tsp salt
3 Tbsp parsley finely chopped (dried parsley works well too)
Grease and flour a 9×13 Pyrex dish or cake baking pan
Wash and scrub zucchini with a vegetable brush. Cut off both ends of zucchini and discard. Grate zucchini and set aside in a bowl.
Clean a small onion and finely chop it. If using fresh parsley rinse it well under cold water, dry it and finely chop.
In a large bowl beat eggs lightly with a whisk.
Add the rest of the ingredients including grated zucchini and mix well.
Pour into greased pan.
Bake at 350 degrees for 40 minutes
The preparation time is about 30 minutes
This zucchini quiche can be used to accompany any meal:
*** with breakfast serve it along with bacon, ham or sausage
*** with brunch it can be served alongside the muffins, bagels, and cornbread
*** with lunch or dinner it is great as the bread and vegetable
The following are some variations of this original recipe:
*** in place of the mozzarella cheese substitute crumbled feta cheese. I also add a ½ cup of pitted and chopped Greek Kalamata olives… or
*** in place of the grated zucchini substitute grated yellow squash and keep the remaining ingredients the same.
To make this a more complete breakfast quiche add the bacon, sausage and or chopped ham to the mix and bake it all together. Precook the bacon and sausage, drain all fat/grease before adding it to the mix and bake. Serve this with fresh fruit and cottage cheese to make it a complete and easy breakfast.
This can be made a day ahead – refrigerate and warm at 350 degrees for 20 minutes. Lightly cover with foil to keep the top from burning. It can also be frozen for use at a later date after it has been baked and cooled off.
