Easy 3-Ingredient Cookie Recipe #1 – Butter Shortbread Cookies
1+1/2 cups flour
1/2 cup powdered sugar
1 cup softened butter
Preheat oven to 350 degrees. Combine all 3 ingredients at once and mix with an electric mixer at medium speed for 8 minutes. Mixture may be dry and crumbly to start, but will become more batter-like after mixing. Drop by heaped teaspoons onto a cookie sheet covered with wax paper or parchment paper. If you prefer, you can roll the batter into smooth balls and flatten lightly on cookie sheet. Bake for approximately 15 minutes or until bottoms are lightly browned.
Easy 3-Ingredient Cookie Recipe #2 – Peanut Butter Crispies
4 cups crisp rice cereal
1 package (12 oz) semi-sweet chocolate chips (or whatever flavor baking chips you want)
4 heaping tablespoons peanut butter (smooth or chunky)
Melt the chocolate chips and the peanut butter together in a heavy saucepan on low heat, stirring constantly. Fold in the cereal. Remove from heat. Plop spoonfuls of the cookie mixture onto a cookie sheet or any platter covered with wax paper. Place in refrigerator until the cookies are firm.
Easy 3-Ingredient Cookie Recipe #3 – Cake Mix Cookies
1 (18.25 ounce) package any flavor cake mix
1/2 cup vegetable oil
Mix the three ingredients together in a large bowl. Make small 1 inch balls with the dough and set on ungreased cookie sheets. Bake at 350 degrees for 7 – 10 minutes.
Easy 3-Ingredient Cookie Recipe #4 – Chewy Coconut Macaroons
5+1/3 cups coconut flakes
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla
Preheat oven to 325 degrees. Line cookie sheet with parchment paper or wax paper. Mix all ingredients together until well combined. Bake for 10 to 12 minutes (they should be very lightly browned). Slide all the cookies off the cookie sheet by pulling on the wax paper and let the cookies cool on the wax paper. Then eat!
