Summer is here so fire up the grill and enjoy these five new recipes!
GRILLED PIZZA
1 loaf frozen bread dough, thawed
Toppings:
Mozzarella and Cheddar cheese
1 8 oz can tomato sauce
1 tsp oregano
1 tsp basil
1/2 tsp garlic powder
1/2 tsp red pepper flakes
Meat toppings of your choice
Spread dough on waxed paper. Roll dough into rectangle. Brush with olive oil and set aside for 10 minutes. Preheat grill. Scrape grate and spray with oil. Flip dough onto grill and peel away waxed paper. Grill 5 minutes, watching for burning. Flip to other side. Sprinkle with cheese, sauce with spices added, meat toppings, and more cheese.
ZESTY GRILLED HAM
1 c. packed brown sugar
1/4 c. prepared horseradish
1/4 c. lemon juice
1 fully-cooked ham steak (1 to 1 1/2 lb & 1″ thick)
In small saucepan, bring brown sugar, horseradish and lemon juice to a boil. Brush sauce over top of ham and grill, turning once, and brushing sauce over. Grill until heated through and well-glazed, about 25 minutes.
GRILLED BARBECUED CHICKEN BREASTS
2 to 3 lb. chicken breasts
SEASONING MIX:
3 T. salt
2 T. onion powder
1/2 T. paprika
2 tsp garlic powder
1 1/2 tsp chili powder
1 1/2 tsp pepper
1/4 tsp ground turmeric
SAUCE:
2 c. ketchup
3 T. brown sugar
2 T. dried minced onion
2 T. frozen orange juice concentrate, thawed
1 T. seasoning mix
1/2 tsp liquid smoke (opt)
Pat chicken dry, so seasoning sticks well; set aside. Combine seasoning ingredients; sprinkle generously over both sides of chicken. (Reserve 1 T for sauce and store leftover in covered container). Grill chicken, uncovered over medium heat for 20 minutes. Turn and grill 20 to 30 minutes more, or until chicken is tender and no longer pink. Meanwhile, combine sauce ingredients in small bowl. During last 10 to 15 minutes of grilling, turn and brush chicken often with sauce.
GRILLED SALMON MARINADE
1/2 c. olive oil
1/4 c. white or red vinegar
1 T. brown sugar
1 tsp parsley
1 tsp rosemary
2 tsp lemon juice
Garlic salt, paprika & Italian seasoning to taste
1/4 c. water
Marinate salmon fillets for at least 1 hour. May grill with thinly-sliced lemon, onion and red bell pepper on top of salmon.
GRILLED POTATOES
In tin pan, cut washed potatoes into very thin slices. Add drizzle of olive oil and 1 stick of butter. Sprinkle with pepper, Lawry’s seasoning salt, and garlic powder. Cover with tin foil. Grill on medium heat for about 30-45 minutes.
