These cold sandwich recipes are perfect for parties or to take along to work for a healthy meal!
Tuna and Egg Sandwich Spread
1 3 oz pkg lemon Jello
1 c. boiling water
1/2 c. cream
1/2 c. salad dressing
1 c. flaked tuna
Dash of salt
1 c. celery, chopped
3 hard-boiled eggs, diced
1/4 c. Cheddar cheese, shredded
1/2 tsp green pepper
1 tsp onion, chopped
Mix Jello with boiling water and cool. Stir all remaining ingredients together and add to cooled Jello. Allow to set in refrigerator. Serve on rusk bun or can be served on lettuce leaf.
Chicken Salad Wraps
3 pounds of chicken breasts, chopped
Add:
1/3 c. chopped red onion
3 stalks celery, chopped
1/2 c. chopped pecans
1/2 c. craisins
1/2 c. green pepper, chopped
Mix in dressing.
Dressing:
1 c. mayonnaise
1 1/2 T. balsamic vinegar
1 1/2 T. Worcestershire sauce
1 T. chopped basil
1 Shake of garlic powder, to taste
Shake of salt and pepper, to taste
Wraps: 1 pkg sundried tomato & 1 pkg spinach flavored
2/3 (8 oz) pkg cream cheese

Leaf Lettuce
Spread cream cheese around 1 side of wrap. Put leaf lettuce on other side and wrap. Place tomato slices next to lettuce. Spoon chicken salad on top of tomatoes. Roll wrap towards cream cheese. Hold wrap in place until cream cheese sticks to wrap. Slice edges off, cut at an angle. This chicken salad mixture is enough for 2 packages of wraps. Put wraps together just before eating.
Chicken Waldorf Sandwich
2 cooked chicken breasts
1 c. mayonnaise
1 c. sour cream
2 T. honey
3 c. diced apples
2 c. chopped celery
1/2 c. walnuts
2 c. halved grapes
Cut up chicken breasts into bite-size pieces. In small bowl, mix mayonnaise, sour cream and honey. Throw all ingredients together in large bowl. Chill thoroughly before serving on crescent rolls. Can also garnish sandwich with poppy seed.
Slim ‘n Trim Egg Salad Sandwiches
3 hard cooked eggs, chopped
1/2 c. finely chopped broccoli
1/2 c. chopped, seeded cucumber
1/4 c. shredded carrot
1/4 c. ranch salad dressing
2 T. mayonnaise
8 slices bread
4 lettuce leaves
4 tomato slices
In medium bowl, combine eggs, broccoli, cucumber, carrot, ranch dressing and mayonnaise; mix well. Add salt and pepper to taste. Top 4 slices of bread with a lettuce leaf and tomato slice. Spread egg salad over tomato slices, top with remaining bread slices.
Turkey Salad Sandwich
2 c. chopped romaine lettuce
1 1/4 c. diced cooked turkey
1/2 c. shredded Swiss cheese
2 green onions, thinly sliced
6 bacon slices, cooked and crumbled
1/3 c. frozen peas, thawed
1/2 c. mayonnaise
1/4 tsp pepper
12 slices whole wheat bread
In bowl, combine first 6 ingredients; mix well. Add mayonnaise and pepper; toss to coat. Spread on 6 slices of bread. Top with remaining bread.
