1/2 cup soft butter (not melted)
1 cup brown sugar
1/4 teaspoon ground nutmeg
3 tablespoons dark rum (or apple juice for kids)
Step 1: Let your butter soften at room temperature. Do not melt the butter. Just let it get soft. To soften it quickly, slice it into thin pats or shred it with a potato peeler.
Step 2: Mix the brown sugar with the nutmeg in a small bowl.
Step 3: Add the butter to the sugar and mix well.
Step 4: Add the dark rum (or apple juice for kids) to the butter and mix well.
Step 5: Store the rum butter in the refrigerator until you are ready to use it.

1 cup semi sweet chocolate chips (or milk chocolate if you don’t like semi sweet)
1/2 cup rum
1/4 cup light corn syrup like Karo
3 cups vanilla wafer crumbs
1+1/2 cups chopped pecans
1 cup confectioners’ sugar
24 red candied cherries, cut in half
Step 1: Melt the chocolate chips in the microwave or on the stove top.
Step 2: Add the rum and corn syrup to the melted chocolate and stir.
Step 3: Stir together the vanilla wafer crumbs, the pecans and 1/2 cup of the confectioners’ sugar in a bowl.
Step 4: Pour the chocolate mixture over the crumb mixture and stir until blended.
Step 5: Shape mixture into 1 inch balls.
Step 6: Roll the rum balls in the remaining confectioners’ sugar.
Step 7: Place half a cherry in center of each cookie and press down lightly.
Step 8: Store the cherry rum balls in an airtight container for several days to let the flavor develop.
